Grilled Raspberry and Brie Sandwiches

These sandwiches are great on their own served with soup or a salad on the side or make them and cut into bites to serve as an appetizer at your next party.

  • 8 slices of sourdough, ciabatta or other hearty bread

  • 8 slices of Brie cheese

  • 4 tablespoons raspberry jam or preserves

  • 4 tablespoons butter, softened

Make the sandwiches by spreading each slice of bread with jam.  Top with brie and make into four sandwiches.  Melt butter in the microwave and brush on one side of the sandwich.  Place butter side down in a warm pan and brush the tops with the remaining butter.  Grill on medium heat, covering sandwiches and turning once, until bread is crisp and toasted and cheese is melted.

Makes 4 sandwiches.
